Tomato and Cheese Quesadillas

1 flour tortilla
1 1/2 tablespoons salsa
1/3 cup grated Cheddar or Monterey jack cheese
1/2 tablespoons finely chopped green onion
1 teaspoons chopped fresh parsley or cilantro
vegetable oil for frying

Spread each tortilla with salsa. Sprinkle with cheese, green onion and parsley or cilantro. Fold tortilla in half, gently pressing edges to seal. Heat a small amount of oil in a nonstick frying pan. Add quesadilla and cook until lightly browned. Turn over and repeat with other side. Cut quesadilla into four wedges and serve immediately with sour cream for dipping.
