Potatoes Genovese

1 1/2 pounds potatoes, peeled and sliced
3 tablespoons olive oil
1 tablespoon garlic, minced
1/4 cup fresh parsley, chopped

Preheat oven to 450F. Rinse sliced potatoes in cold water and pat dry. Combine potatoes, 3 tablespoons oil, garlic and parsley in a bowl. Toss to coat. Season with salt and pepper to taste. Arrange potatoes in an even layer in a glass baking dish. Bake about 35 minutes, until tender.
