Chinois Chicken Salad
Dressing:
2 bunches green onions, white only
4 tablespoons dry mustard, create a paste
1/3 cup pickled ginger
1/2 cup lime juice
1 tablespoon garlic, minced
2 tablespoons shallots, minced
1/3 cup honey
2/3 cup soy sauce
1/3 cup ginger vinegar
3 1/2 tablespoons chili oil
2 1/2 tablespoons dark Asian sesame oil
2 cups peanut oil
Salad:
Wonton wrappers, cut in strips and deep fried, or chow mein noodles
1 whole, cooked chicken breast, cut in strips
1/2 head napa cabbage, cut crosswise in strips
1/2 pound spinach, destemmed and cut crosswise in strips
1 head radicchio, cut crosswise in strips
2 carrots, cut in matchsticks
1/2 daikon radish, cut in matchsticks
black and white sesame seeds, toasted, for garnish
Make the dressing: In a blender or food processor, combine all ingredients except the oils. Blend till smooth. With the machine running, add the oils slowly till the dressing emulsifies. Prepare the salad: Toss together all the ingredients and garnish with the
sesame seeds.
