Fiery Green Banana Salad
2 tablespoons salt dissolved in 8 cups water
4 green bananas
2 green onions
juice of 1 fresh lime
1/2 teaspoon salt
1 clove garlic, minced
1/4 cup hot water
1 tablespoon freshly chopped parsley
Heat salted water to boiling in a large saucepan. Cut green bananas in half vertically and place in boiled salted water. Cover saucepan and cook for 15 to 20 minutes, until bananas are tender. Drain, cool slightly and peel. Cut boiled green bananas into 1 inch thick slices. In a small mixing bowl, stir together the green onions, lime juice, salt, garlic and hot water. Add pepper sauce and sliced bananas. Stir to coat banana slices thoroughly. Serve garnished with parsley. Serves 4.
