Green Pea Salsa
1 14 to 16 ounce can sweet peas, drained
1 14.5 ounce can diced tomatoes with basil, garlic and oregano, drained
4 small green onions, sliced
1/2 cup chopped fresh cilantro
1/2 teaspoon grated lime rind
1 tablespoon fresh lime juice
1 small cucumber peeled, chopped
1 tablespoon olive oil
1/4 teaspoon salt
1/4 teaspoon coarsely ground black pepper
Stir together first 8 ingredients in a bowl; let stand 1 hour. Season with salt and pepper.
