Zucchini Salsa

2 large zucchini squash
1 tomato, chopped
1 tablespoon wine or cooking wine
cooking spray
2 tablespoons chopped cilantro
1 chopped green onion
1/2 teaspoon granulated garlic or 1 chopped clove
1/4 cup chicken broth or water

Wash squash and slice into thin ovals. Spray saute pan with cooking spray, put in all vegetable ingredients, cook 3 to 5 minutes stirring occasionally till squash changes color. Add remaining ingredients, cover and simmer a few minutes until tender.
