Nana Mary's Eggplant Meatballs
1 pound ground beef sirloin
1/2 to 3/4 cup plain bread crumbs
3 eggs
1 small onion, chopped very fine
2 cloves garlic, mashed
fresh chopped parsley
fresh chopped basil
salt and pepper to taste
1 medium eggplant
Spaghetti sauce, if desired
Combine ground beef, crumbs and eggs. Add remaining ingredients except eggplant and sauce. Peel and cut eggplant into chunks.
In a small saucepan, bring 2 cups of water to a boil, add eggplant and cook for about 4 minutes just until tender. Rinse with cool water, drain well and remove seeds if desired. Add eggplant to the meat mixture should be very soft and moist. If mixture appears dry, add 1/4 cup water. Form meatballs and broil just until tops are brown, then add to spaghetti sauce. Stir and cook 1 1/2 to 2 hours.
