Vegetable Farfalle Puttanesca
1 tablespoon olive oil
4 cloves roasted garlic
1/4 cup chopped eggplant
2 tablespoons pitted olives
1 tablespoon capers
1/4 cup artichoke hearts
1/4 cup fresh tomatoes, chopped
tomato sauce
farfalle pasta, cooked
feta cheese
In a hot pan add olive oil and next six ingredients and saute for about a minute. Add tomato sauce to taste. Add cooked farfalle pasta and serve with feta cheese.
