Gai Pad Bai Graprau
Chicken with Basil and Chili

1 pound chicken fillets
4 cloves garlic
10 green beans
20 fresh basil leaves
3 tablespoons oil
1 teaspoon chilli paste
3 tablespoons fish sauce
2 tablespoons sugar

Slice chicken, chop garlic, cut beans into 1/2 inch long pieces, chop basil leaves. Heat oil in a wok or a pan, add garlic and roast for a minute. Add chilli paste and roast. Add chicken and stir fry for two minutes. Add fish sauce, sugar and beans and continue to stir fry. Reduce heat and add the basil leaves. Serves 4.
