Sweet Peas with Mint
4 medium scallions, minced
1 head Boston lettuce, coarsely chopped
1 pound green peas, fresh or frozen
2 teaspoon mint leaves, chopped
1 tablespoon butter
1/8 tablespoon sugar
1/8 teaspoon black pepper, or to taste
1/8 teaspoon table salt, or to taste
Heat a large saucepan coated with cooking spray over medium heat. Add scallions and lettuce and cook until lettuce is wilted, about 3 minutes, stirring constantly. Add peas and just enough water to cover them. Increase heat to high and cook peas until tender, about 5 minutes. Drain; add mint, butter, pinch of sugar, salt and pepper to taste. Serve immediately.
Serves 4. 2 points per serving.
